Fasting pizza with vegetables

I don't know why, but the homemade pizza seems to be much tastier than the one I ordered.

It is very easy to prepare and you can play with the ingredients as you like, or what you have in the fridge.

It is ideal either for a meal with friends or for a weekend treat.

INGREDIENT:

  • 500 g flour
  • 300 g of water
  • 10 g of yeast
  • corn oil (or whatever you prefer)
  • basil, oregano, salt.
  • mushrooms
  • spinach
  • a zucchini
  • a red Transylvanian
  • Cherry tomatoes
  • olives
  • an onion
  • smoked tofu

METHOD OF PREPARATION:

1. Mix the yeast with half a teaspoon of sugar and 100 ml of lukewarm water. Stir until the sugar and yeast are completely dissolved and put it in a warm place where we leave it for about 15 minutes.

* For any dough is valid, the ingredients should be at room temperature, except the water should be lukewarm, not hot.

2. Meanwhile, mix the rest of the flour with oregano, basil, salt, add the mayonnaise and the rest of 200 ml of water (it can be either mineral water for a fluffier dough, or warm water as I put over the yeast). Knead the dough until it starts to set. Because it will stick to the hand, we put a little oil and continue to knead (I put it in my hand 3 times). It should not be kneaded too much, about 10 minutes. The dough should be soft and slightly sticky. Cover it and put it in a warm place and let it rise for about 30 minutes.

3. Prepare the sauce until the dough grows. Mix the ingredients in a kettle over low heat until it starts to boil.

4. Cut the vegetables according to your preference and prepare them to make it easier to decorate the pizza.

5. After the dough has risen, divide it into 3 equal parts and spread a sheet on the worktop lined with flour.

Heat the oven to 200 g, with heat up, down and ventilation.

6. Move the sheet on the pizza tray, grease it with 3-4 tablespoons of sauce and garnish it with the prepared vegetables, and put the tofu grated on top.

I put over the sauce and a few teaspoons of pesto and spread it well. It will give a refreshing basil taste.

• ketchup (or tomato juice)
• 2 cloves of garlic
• olive oil
• oregano, pizza spices
• salt pepper

Meanwhile, cut the eggplant into slices and add salt, then drain in a sieve. Chop the onion and finely chopped garlic and fry in olive oil until the onion becomes translucent. Add the well drained eggplant pieces, chopped tomatoes and your favorite spices. Stir and simmer for a quarter of an hour.
