Washington, D.C.-area residents who went to the Angelika Film Center & Café on June 19 sipped three different types of Napa Valley’s Beringer wines, watched 2012’s SOMM—a documentary about the journey of four men as they prepare to take the master sommelier exams, considered to be the highest distinction a professional can attain in the fine wine and beverage industry—and listened to a Q&A with one of the Washington, D.C. area’s two master sommeliers, Keith Goldston of Bryan Voltaggio’s RANGE.
At around 6 p.m., guests could start trying Beringer’s Napa Valley Chardonnay, which was being poured on the first level near the check-in desk. Visitors could then make their way up to the Angelika’s third-level Lounge—home to a bar—where they could sample Beringer’s Meritage, a red wine made with dark and red black fruits, and the vineyard’s Cabernet Sauvignon.
SOMM started at 7:30 p.m. and was followed by a Q&A with Goldston. After the Q&A, Goldston told The Daily Meal that becoming a master sommelier (they are only 201 in the world since the test began being administered in 1969) gave him respect with Voltaggio and confidence to create RANGE’s wine menu, which is based on music.
But no, you won’t find just a list of wines that remind Goldston of his favorite bands. “It’s more of a mood, a style, a feeling,” he says. “I have one page that’s whites with precision, power and intensity, some would say, the greatest ever, either you get it or you don’t. Rush. I’m not a huge Rush fan, but the Rush fans are insane. They’re crazy, they’re passionate, and they will argue to the death that it’s the greatest, most-talented band ever, and that whole page is nothing but Rieslings. And Riesling fans are very passionate and crazy like Rush fans.”

How a Humble Steakhouse Became the Best Restaurant in Latin America
It was a precocious 20-year-old Pablo Rivero who threw the few savings he had, along with backing from his grandmother and father, into a humble parrilla (steakhouse) that opened in a sketchy Buenos Aires ‘hood shortly before Argentina’s most devastating economic crisis unleashed its turmoil in 2001.
Today, Parrilla Don Julio tops the bucket list of almost every visitor to the Argentine capital, a restaurant frequented by porteños and tourists alike, the one steak you absolutely must eat when in town, and a name that’s become synonymous with Buenos Aires. Yet, 20 years ago, its first diners were neighbourhood locals keen to devour a decent steak and chips (and many remain faithful patrons today), and it probably didn’t cross Rivero’s mind that Don Julio would mark two decades in the business, never mind be crowned number one in Latin America’s 50 Best Restaurants in this most complex of years, 2020.
Family is key to the Don Julio narrative, the Buenos Aires establishment that has become the first non-Peruvian establishment since 2013 to take the top spot in the regional awards. It’s an accolade that should be celebrated, given that ‘steakhouses’ aren’t usually the recipients of the big prizes. The Don Julio story runs deeper than that – and is an integral element of Argentine culture and heritage.
Restaurateur and sommelier Rivero says: “Our mission has been the same from the beginning: placing value on our traditions and culture. There’s a family behind Don Julio, a family originating from Rosario in the middle of Argentina who laid down roots in Buenos Aires. A butcher and livestock producer for a grandfather, a livestock-producing father, and a son who needed to forge a future, joined forces, bringing their ambitions and relevant experiences to the table, to ensure that I could have a parrilla using the beef we raised.” For many years his mother Graciela managed the till while dad Enrique sourced products from around Argentina: Enrique’s most recent find was goat kid sweetbreads.
Beef has long been one of Argentina’s main commodities and an important facet in Argentina’s culture, he adds, its cattle population outnumbering its human one. “Argentina is one of few countries, if not the only one, that undertakes such vastly extensive cattle farming, and it takes place in a fertile paradise found in Latin America’s southern hemisphere. Many Argentines have a connection with livestock and commercial beef, either because they work in the industry or live close to the countryside. We’re very proud of that heritage – it’s an integral part of our daily lives and we simply can’t imagine a table without grilled meat on it.”
Located on a sunny corner with a bevelled entrance, a classic architectural style in Argentina, in pre-Coronavirus times hungry punters would curve around the ruddy façade, eager to consume off-the-menu entraña (skirt steak) washed down with a bottle of fruity Malbec. Don Julio’s popularity knows no bounds. While grass-fed beef was the original key to the parrilla’s success (that, paired with one of Buenos Aires’ finest wine cellars rigorously selected by Rivero), the goalposts started shifting around 2012, and Don Julio started to take on a new dimension.
Rivero says: “The parrilla has evolved, which coincided with my own growth. From the age of 20, I grew up in the restaurant, and for the first 10 years I lived upstairs. By 2012, I’d gone through a period of learning from colleagues and great masters – I had grown. As we started to apply new ideas, obviously I was filled with doubts and fears like anybody, but Don Julio emerged with a new voice. Nothing has changed – Don Julio has simply evolved. Our expertise, the intensity of our work with cattle and on farms, our wine cellar and our service have all developed. It all represents the growth of a young restaurant, which is a living thing.”
For many years, grill-master Pepe Sotelo was the smiley, ruddy face working the interior parrillas, cooking every prime cut to order. Now he has retired, and today the culinary team is led by next-generation parrilleros Marcelo Troche and Gustavo Caballero, with chef Guido Tassi, a champion of local ingredients, spearheading research and development, and maître Valeria Mesones leading front of house.
In the past three years, Don Julio has gone from strength to strength, picking up Latin America’s 50 Best Art of Hospitality prize in 2018, becoming the best establishment in Argentina in 2019, earning a place on the World’s 50 Best list that same year, and was named the second-best grill house by World’s 101 Best Steak Houses earlier this year. It should also be noted that restaurateur and sommelier Rivero is the force and face of Don Julio, rather than a renowned chef.
As for the immediate future, the pandemic has allowed Rivero and team to drive forward, investigating different cooking techniques, strengthening beef traceability and working with different types of animals in terms of age and weight to take Don Julio to the next level.
And while some may question whether a steakhouse should reach the upper echelons of prestigious rankings, Rivero has this to say: “The parrilla is part of Argentine culture: it’s in our blood. Why shouldn’t a parrilla be in the ranking? Is it not of value? It's our culinary culture.”
Certified Ethical Hacker
Criminals are constantly coming up with new ways to illegally access computers for credit card information or passwords. The job of a professional hacker is to find any weaknesses and vulnerabilities. Most of these individuals have a master’s degree and CEH certificate from the EC-Council but it’s not always necessary if you are particularly good at it. Professional hackers take home between $50,000 to $120,000 a year depending on experience.
The Pentagon, FBI and the US Army all hire hackers on the regular. Fortune 500 companies like Apple, Paypal and Alphabet also employ them. Roger A. Grimes says, “I’ve been in computer security for over 30 years, and no job has been more challenging and fun than professional penetration testing. You not only get to do something fun, but ‘pen testers’ often are seen with an aura of extra coolness that comes from everyone knowing they could break into almost any computer at will.”
Canned Cocktails Are Crushing It
hen Tom Macy, a partner at Clover Club and Leyenda in Brooklyn, New York, created a bottled Paloma at Leyenda, he “discovered that it was better than the Paloma we made at the bar.” Intrigued, Macy sampled every ready-to-drink (RTD) product he could find and concluded: “We thought we could do it better.”
Macy teamed up with Clover Club and Leyenda co-owner Julie Reiner and created Social Hour. Launched in August, the brand’s initial offerings include the Gin & Tonic and the Whiskey Mule, made with New York Distilling Company’s Perry’s Tot Navy Strength Gin and Ragtime Rye Straight Whiskey, respectively, as well as a low-ABV Pacific Spritz with a rosé-wine blend from New York’s Finger Lakes.
The RTD category certainly isn’t new, and it was gaining steam before the pandemic. But with the bar industry crippled and no clear idea of when sitting on an indoor stool watching a bartender stir a martini to life will become the delightful norm again, the canned cocktail has been catapulted into the spotlight. According to Nielsen, canned cocktails have generated $117.99 million off-premise during the pandemic (from March 7-August 15) that’s a 146.6 percent increase compared to a year earlier.
Perhaps as important as the category’s growth is its clear direction towards premiumization, reinforced by the arrival of many high-quality craft offerings.

Sparked by the Little Guys
“When I first started thinking about true cocktail-bar quality canned cocktails, my first thought was, ‘Why doesn’t this already exist?’ And I think the answer was that the market for them wasn’t established enough for large brands to want to jump in. Now that tide has shifted,” Macy says. “It’s been almost 20 years since Flatiron Lounge—Julie’s first pioneering bar in New York City—started teaching people how to drink better. I think there’s a much better general understanding now of what makes a great drink.”
For Los Angeles bartender Aaron Polsky, the canned cocktail enables bartenders to scale up their roles—and their income—beyond the venues where they work. Most recently of Harvard & Stone, Polsky launched LiveWire Drinks, a series of well-wrought canned cocktails that showcases recipes from top bartenders. The first to make a splash, just at the beginning of the pandemic in March, was Polsky’s own Heartbreaker, a Moscow Mule-meets-Paloma with vodka, grapefruit, kumquat, jasmine, and ginger. “We doubled our sales in July and beat our July sales by the middle of August,” Polsky says.
Neal Cohen and Yoni Reisman joined forces with Atlanta barman Miles Macquarrie of Kimball House and Watchman’s to officially launch Tip Top Proper Cocktails last fall. Cohen and Reisman worked in the music festival industry for years. “Along the way, we saw the demand for quality cocktails growing, but were frustrated by the movement’s inability to meet the demand for these drinks in high-volume situations,” Cohen says. Their solution was Tip Top, which focuses solely on the classics: an Old Fashioned, Manhattan, and Negroni served in retro-style 100ml cans. “Reception has been increasingly positive as people discover they can get a bar-quality classic cocktail conveniently at a time when visiting their favorite bar is not as feasible,” Cohen adds.
Other canned cocktail producers are pushing esoteric flavor limits akin to the most ambitious cocktail bars. Empirical, the brainchild of Lars Williams and Mark Emil Hermansen, two alums from the legendary Copenhagen restaurant Noma, developed a spirit base of beet molasses and saison yeast. In true Nordic fashion, their new Can 1 combines milk oolong tea with toasted birch and green gooseberry, and Can 2 mixes sour cherry, black-currant buds, and young pine cones with walnut wood.
Washington, D.C., distillery Don Ciccio & Figli is known for its range of Italian-style liqueurs based on 19th-century family recipes that now make a cameo in the brand’s new Perla RTD line. Some are bottled, but La Perla Ambrosia Spritz, which brings together the herbal Ambrosia liqueur with house-made vermouth and soda, is packaged in a can. “I first had the idea for a canned cocktail seven years ago, but thought now was the perfect time to launch,” says Francesco Amodeo, president and master distiller.
Organic producer Greenbar Distillery in Los Angeles also spawned a canned cocktail, an Italian-style spritz, in 2019, “after three years of trying to teach simple cocktail making to our tasting room visitors and realizing that most folks wanted to drink a good cocktail, not make one,” says cofounder Melkon Khosrovian. Prior to the pandemic, bartenders comprised more than 80 percent of Greenbar’s customer base, adds Khosrovian. Today, thanks to Greenbar’s new line of canned highballs, including Gin + Tonic and Single Malt Whiskey + Soda, Rum + Cola, 80 percent of its sales are now generated through retail, a saving grace in an upended economy.

Roots of Premiumization
The Cooper Spirits Company was one of the first to pioneer the craft cocktail in a can. In 2016, it launched Hochstadter’s Slow & Low Rock and Rye, which features straight rye whiskey, Florida navel oranges, raw honey, bitters, and rock candy. It clocks in at 84 proof and is packaged in 100ml mini-cans. Its success hinted at the premiumization that would soon guide the category.
In recent years, such sophisticated, niche products as Novo Fogo sparkling Caipirinhas and New York sommelier Jordan Salcito’s Ramona wine spritzes have garnered attention. San Diego craft distillery Cutwater Spirits even specializes in the canned genre its latest offering is a Long Island Iced Tea.
Big brands have responded as well. Tanqueray just introduced its RTD trio—Tanqueray Gin & Tonic, Tanqueray Rangpur Lime Gin & Soda, and Tanqueray Sevilla Orange Gin & Soda. Bacardi’s lineup—Lime & Soda, Limon & Lemonade, and Rum Punch—launched in May, and the debut was so successful that “We’ve already doubled our forecast for the year,” says Pete Carr, regional president of Bacardi North America.
Agave Takes the Lead
Agave spirits are playing a starring role in the new craft canned cocktail movement. Richard Betts, the master sommelier who founded such spirits brands as Sombra Mezcal and Tequila Komos, saw the strength of the RTD category in Australia, where he was making wine, and wanted to launch a tequila-based version for the U.S. market. His whimsically packaged Superbird Paloma is a blend of pink grapefruit juice, agave nectar, and 100 percent blue agave tequila blanco. Superbird launched in the beginning of July and sold over 1,000 cases in the first two weeks without any large-scale distribution deal.
Bartender Scott Baird, co-founder of Trick Dog in San Francisco, designed the recipe for the first-ever large-format resealable Party Can by Cocktail Courier, which serves up to 12 full-size margaritas. A blend of 100 percent blue agave tequila, orange liqueur, fresh lime juice, and a spice mix of ginger, cinnamon, and chile pepper, it’s found success on- and off-premise, says CEO and founder Scott Goldman: “Since lockdown occurred, canned cocktails have become even more popular as they ensure that people don’t have to travel to secure ingredients when they enjoy drinks at home. They also help to limit contact between bartender and sipper if [they’re] ordered as a to-go option from a bar.”
Jordan Dil and Mikel Noriega were in business school at UCLA when they dreamed up plans for Elenita, a line of canned mezcal cocktails, for their capstone project. Made with agave espadin in flavors of cucumber-lime-basil and pineapple- jalapeño, Elenita’s offerings arrived on the market a few months before the crisis began. “We started the pandemic with 40 retail accounts and now have over 150, and our online sales saw a nice bump,” says Dil. “The pandemic accelerated consumers’ introduction to the category and put it on the map.

What will happen to canned cocktails when bar life resumes? Many of the bar and restaurant operators that have embraced cans during the pandemic believe this practical shelf-stable format has the potential to find a permanent place in the on-premise arena. The Morris, in San Francisco, has even bought a canning machine to begin making its own RTD products. In Detroit, Thai restaurant Takoi is already there, and the cans are not just about having another SKU to sell.
Takoi turns out a line of four cocktails served in eight-ounce stubby cans with labels designed by the executive chef, Brad Greenhill. Selections include Promises in Vortex, a spicy margarita riff, and Strawberry Alarm, a fruity vodka Collins of sorts.
Beverage director Drew Pompa says that although the cocktail four-packs have boosted revenue on take-out and delivery orders, they also act as organic branding tools for the restaurant. He thinks this advantage will drive bars and restaurants to reimagine a more adaptive business model, one that delves more deeply into product development.
“Restaurants and bars in the future may have this widespread popularity, not by the sheer amounts of diners or the number of five-star reviews, but because of their product awareness,” Pompa explains. “It’s interesting to think that someone who knows Takoi five years from now, who has never visited the restaurant, will only know of Takoi because of a canned cocktail.”
Even when restaurants and bars once again start to swell with customers craving intricate, made-to-order libations, the quality canned versions that helped them find a little more joy when they were cooped up at home will still be welcome.
“Canned cocktails are here to stay because they meet a huge need,” says Greenbar ’s Khosrovian: “When your favorite bartender isn’t around and you don’t want to make it yourself.”
Social Hour’s Macy echoes that sentiment. “Having an ice-cold gin and tonic in your fridge is a wonderful thing,” he says.

Cocktails to go are a bandaid for bleeding bar businesses, but there are procedural and safety issues to consider
Laura Newman, winner of the prestigious World Class bartending competition in 2018, and the first woman to hold the honor, is accustomed to being able to take on a challenge head-first. But this week has seen Newman, as well as myriad bar owners and bartenders across the globe, engaged in a wholly different kind of problem-solving.
“I find myself the owner of a cocktail catering company…” reads the subject line of an email from Newman, owner of Birmingham, Alabama’s Queen’s Park.
Every day new states are being added to the growing list of those whose restaurants and bars must close their doors to eat-in or drink-in patrons to curb the spread of COVID-19. Newman is one of many owners who are rewriting business models and operating procedures on the fly for their restaurants and bars, as new state liquor laws in the US are being enacted daily to accommodate alcohol-to-go.
Some states have limited this practice to wine and beer sales only, but others, including California, New York, and Vermont, (as of press time) have allowed the possibility for owners to also sell takeout and delivery selections from their cocktail lists.
Cocktails are an ephemeral sort, generally meant to be drunk well-chilled, and within a short time of having been prepared. So, for many bar owners working within the new system, it’s not just a simple matter of preparing drinks according to the usual specs and putting them in a plastic cup with a straw. (Furthermore, open container laws have generally not changed.)
But bar owners and bartenders are also a rolling-with-the-punches sort, crisis or no crisis. “As each day goes by, we're trying to adapt to these unpredictable circumstances and reinvent the wheel,” says Andrea Grujic of Astoria Queens’ The Highwater, appropriately named from the expression “come hell or high water.”
Here are some of the ways that several bars still in the cocktail business this month are demonstrating creative workarounds in the new system, from glassware to garnish.

Glassware and Packaging
A Martini without a Martini glass is just bracingly cold gin. If there’s no tropical mug, does it even count as tiki? Certain glasses define their cocktails, but in the new era of takeout cocktails, “sealable” is the new appeal, as bars have employed everything from coffee cups with lids, to jelly jars, to soda bottles, to plastic milk cartons.
Lisa Harrington had sourced mini bottles in anticipation of the closure for her Bennington, Vermont bar The Miller’s Toll, and is finding customers appreciate the novelty and aesthetic: “People have been loving the bottles,” she says, “likening them to Alice in Wonderland potions.” Also a useful metaphor for our new reality—what feels to many like a parallel universe.
Newman has also offered Queen’s Park’s actual glassware for sale alongside her takeout selections. “We have a pig-shaped tiki mug,” she says, which has sold incredibly well in the early days to loyal patrons wanting to help keep her afloat. “We’ve already had to place another order for more.”
Amazon is still a go-to source for all things, including takeout packaging options for bar owners, but there are several independent online retailers who specialize in containers of all kinds. These include Ebottles, McKernan Packaging, Berlin Packaging, and SKS Bottle and Packaging.
Cocktails that are made from all spirit—Martinis, Manhattans, and Negronis, for example—can typically be batched in large volumes and simply portioned to order to be chilled later, which is a practice that can save time for bartenders in the heat of service. Many bars are now finding this especially useful for preparing cocktails for takeout and delivery. For example, New York City’s Dante is one of the world’s most lauded bars, but it also can be one of the most crowded to drink in. In the age of COVID-19, several of the bar’s signature cocktails can even be purchased in large batches to enjoy in the comforts of home, including multiple Negroni and Martini selections which are scaled for three or more servings.
Patrick Smith, Bar Manager at The Modern, whose cocktail program employs batching, offers the following guidance: “Once you have a balanced cocktail recipe, it’s easy to translate it into a series of ratios for your batch. I like to start with traditional ounce measurements, and then break it down into ‘parts’ so you can measure in whatever bulk quantity you need.” For example, a Martini made with 3 ounces of gin and ½ ounce of dry vermouth would have 6 parts to 1 part each of those ingredients, whether you are measuring parts in cups, liters, or gallons.
To portion, know the yield of the base recipe, typically between 3 and 5 ounces for most cocktails, and bottle and label accordingly whether you are offering a single serving cocktail or bottle service for six.
The Highwater has employed this technique across all of its takeout selections. “At first, each cocktail was made and bottled to order which became a little hectic once the virtual happy hour rush kicked in,” says Grujic. Now, “each cocktail that we offer is pre-batched for the day and diluted the same way as if we were in real time service—by shaking or stirring.” Ice is offered on the side where appropriate, along with a paper parasol in the spirit of the bar’s “Quarantiki” vibe.

Some assembly required
While many patrons are finding novelty in sipping a cocktail from non-traditional glassware, some bars are offering guidance on how to complete the cocktail sipping experience outside the bar once someone it’s been home—whether by some aspect of dilution, temperature, garnish, or adding an additional topping ingredient that wouldn’t travel well if fully assembled, like soda, tonic, or sparkling wine.
“For every drink I am giving instructions,” says Brooke Baker of Manhattan’s Underdog. “Each one we have has needed a slightly different spin on it. If it is a stirred drink I will slightly under dilute it and instruct the guest to give it a quick stir. If the drink requires a topper like prosecco, I would have them buy a bottle of prosecco at a discounted rate from us, with instructions on how to combine it with the drink, and how much to use.”
In Alabama, prepared cocktails can’t be sold as takeout in the current system, but Newman has found a way to still provide cocktails to her Queen’s Park clientele, via do-it-yourself assembly, where alcoholic and non-alcoholic components of a cocktail must be sold separately and combined at home: “I have gone from being a bar owner to the owner of what is essentially a liquor store and non-alcoholic cocktail catering company.” Bars in Alabama can sell liquor in its original packaging, “so we bought a ton of mini bottles,” she says, which are offered alongside vacuum-sealed packets of the non-alcoholic elements of her cocktails.
Similarly, Mike Vacheresse, owner of Travel Bar in Carroll Gardens, Brooklyn, is offering separate containers of sour mix for shaken drinks like whiskey sours. Very much the bar dad, he takes the time to explain to each patron stopping by for (hygienic!) pickup how to shake the drink at home, and how to use the garnishes he packs on the side.
Speaking of, garnishes are traditionally the final element of cocktail construction, adding visual appeal and aromatics, and acting as a sort of spokesperson for what to expect from the cocktail it adorns. However, in the era of takeout cocktails, with the exception of tiki umbrellas, they may be the element most subject to sacrifice.

“For Negronis I am giving out whole oranges so that they can garnish at home,” says Baker. “Otherwise I am skipping the garnish. Mostly for (sanitation’s) sake. I do tell (customers) what the garnish should be and how to prepare it if needed.”
Restaurants and bars are among those businesses deemed essential, but as such those still working must be extra cautious in preparing takeout and delivery orders. Baker says she’s wearing gloves and a mask while prepping, and double sanitizing all tools and containers in advance.
Harrington also identified another potential risk factor for takeout cocktails from her angle in Vermont, and a possible solution: “We ended up making our traditional drinks without ice, (serving them) room temp to prevent drinking in the car on the way home, adding a sticker to seal the bottle, directions on how to prepare the cocktail, and a warning to not open before getting to their destination and not to drink and drive.”
If takeout cocktails can help bars and restaurants stay in business during this time, however, that may be all the cherry on top we need.

A 2017 Nielsen report found that 42% of millennials use social media to post photos of what they're drinking, and 45% are influenced by social media when choosing what they drink – therefore “influence” is a moving target. We sought help to assemble this list from a diverse group of people in the wine community and we are grateful for their input. This list is meant to honor winemakers, wine drinkers and wine lovers of every conceivable demographic. 100-Cheryl Durzy: founder and CEO of Liberation Distribution AKA LibDib. LibDib is rapidly changing the less-than-sexy distribution side of the wine business. Cheryl and her team launched their distribution platform distributing thousands of products to restaurants, bars and retailers in California and New York. 20-Matt Kramer: since 1985 he has contributed to Wine Spectator but he has been writing about wine since 1976, utilizing a style less formal and more open than most wine writers. Praised for lucidity in his writing he has helped champion small wineries and now the commonly understood idea of terrior. He has seven books published about wine.
19-Jeff Dubiel: As chief marketing officer for The Wine Group, Dubiel has a knack for effectively marketing and selling lots of wine. 10-Robert Parker: of The Wine Advocate and his eponymous website covers the wines of Northern California and Bordeaux, and acts as a critic-at-large, conducting vertical tastings and horizontal tastings of older vintages of California and elsewhere. Parker has published several wine books and has received so many honors it’s hard to count them all, but have included the first wine writer/critic to receive the Grand Cross of the Order of Civil Merit, Spain’s highest civilian honor, and the first wine critic inducted into the Culinary Institute Of America’s Vintners Hall of Fame in Napa Valley.
9-James Laube: Everyone knows his name and as the lead taster and wine writer for Wine Spectator, Laube’s influence has been non-stop for over 37 years. 3-Tim Turner: joined Walgreen’s company seven years ago, and he has grown the category’s annual sales to $1 billion throughout the chain’s 8,200 stores. Under Turner’s guidance, Walgreen’s runs a lean, efficient unit with targeted larger brands. No, he doesn’t promote smaller wines, unique offerings or anything under the radar, in fact they stock just 150 wine options, all national brands, which makes the billion dollars of sales rather impressive. Additionally roughly 7,500 of those stores hold a FedEx drop off for physical wine shipments.
2-Wayne Chaplin: is the president and COO of Southern Glazer’s Wine & Spirits, the nation’s largest spirits and wine distributor with estimated revenues of more than $9 billion, about half of that being wine. You may dislike the distribution system in the U.S., but you cannot ignore them. The company has operations in 36 states, employs nearly 12,000 people promoting 1,178 wineries, from 152 offices. The firm generated revenue estimated to be at $17 billion in 2016. It sold 150 million cases of wine and spirits that same year to more than 350,000 retail and restaurant accounts.
1-Annette Alvares-Peters: Costco’s assistant general merchandise manager for beverage alcohol includes wine, spirits and beer purchases for Costco, and Costco is America’s largest alcohol retailer selling wine in 488 stores in the U.S and Puerto Rico, and additional stores in seven foreign countries with 70 million members. Wine revenues alone reached an astounding $1.69 billion for 2016 - and including all alcohol they sold $3.6 billion worth. Factor in their own Kirkland label, which comprises 15% of their total wine sales, and she has helped wine be much more accessible to the masses. Martin earned this rare designation from the American Cheese Society (ACS) in 2017 after passing a three-hour, 150-multiple- choice question exam for which she studied three to six hours a day for six months while working at her store. She was re-certified last year, as required every three years, cataloging the 1,000 compulsory hours of work experience and education or professional development. She plans to take the ACS' sensory exam, which evaluates knowledge and skills in the assessment of cheese, from determining condition and quality to evaluating flavor, body, texture, and appearance, post-COVID.
Test takers are required to have a high school or GED basic education and document 4,000 hours (two years) of paid or unpaid work experience in the cheese profession during the past six years, or 2,000 hours of same and 2,000 hours of any combination of work experience and formal or continuing education or professional development deemed acceptable by the ACS. Applications may be randomly audited for accuracy.
Danilo Bakery changes hands
In what can only be described as a win-win situation, the decades-old Danilo Bakery (516 Green St., at Bannan Street) in San Francisco's North Beach has been purchased by a family from Lucca, Walter and Stefania Gambaccini, in partnership with Lauro Capocchi, who owns two bakeries in Florence.
The Gambaccinis, who will operate the bakery as a family, will continue to bake the Italian favorites that Danilo has been known for, including their breads, cookies and tortas.
Danilo Bakery has been a part of the Italian fabric of the Beach for a long time. Every spring, I look forward to the torta di verdura, a slightly sweet little tart filled with finely chopped Swiss chard, pine nuts and currants. North Beach revelers have been known to knock on the below-street-level bakery door for an alcohol-absorbing late-night loaf of bread, straight from the oven.
Danila Di Piramo, who has owned the bakery with her brother, Danilo Di Piramo, for 36 years, had been considering retirement, but wanted to find someone to continue the bakery. Instead, she says, "They found us." Walter Gambaccini, who was a hair stylist in Lucca, says he wanted to buy a bakery because his 18-year-old son, Elia, was studying baking in Italy, and because the whole family loves San Francisco, which they have visited several times.
Danila Di Piramo says the new owners took over about a month ago, but she will stay on for awhile to help them. She says she will miss her customers, but will enjoy doing absolutely nothing.
Danilo Di Piramo, who was the baker, has been sidelined in a wheelchair for the past several years because of an accident. Two other longtime bakers, Fermin Orellana and Juan Granado, still work at Danilo and will stay on to show Elia the ropes.
The 20-year-old Pancho Villa Taqueria, a busy dining spot in San Francisco's Mission District (2071 16th St., near Valencia Street), will get a third location in the space occupied by Pier One Deli. Pancho Villa owners Gary, Jose and Jesus Espinoza have entered into an operating agreement with Pier One owner Tulio Silva, which means that Silva pays the Pancho Villa owners for the name, recipes and advice.
Silva says he will continue to operate the deli while the taqueria equipment is being installed, but that the changeover should be completed by the end of the month. The new taqueria will have 50 seats inside and 30 to 50 outside.
Silva says he wanted to make the change because of increasing competition from nearby burger joints.
But what about Traci Des Jardins' Mijita taqueria in the nearby Ferry Building? Gary Espinoza says Mijita and Pancho Villa have different price structures, different food, different everything. "Mijita charges $4 for a taco, while we charge $2," he says.
The Espinozas also own a Pancho Villa in San Mateo and El Toro Taqueria in the Mission.
After two years, Mario Nocifera, the manager and maitre d' of the Dining Room at the Ritz-Carlton in San Francisco, has left to become the general manager of the newly opened 96-seat Scott Howard restaurant (500 Jackson St., at Columbus Avenue) in San Francisco.
Prior to joining the Ritz-Carlton, Nocifera was the general manager of San Francisco's Charles Nob Hill and also worked as an assistant manager at Spago in Palo Alto.
Nocifera also worked with master sommelier Bobby Stuckey at the Little Nell in Aspen and has passed the first leg of the master sommelier certification course.
One of my favorite restaurants moved when I wasn't looking to bigger quarters and a new town. South City Seafood Ihaw Ihaw restaurant, formerly in South San Francisco at 1129 El Camino (near Arroyo), is now at 422 San Mateo Ave. (near Taylor Avenue), in San Bruno. (Ihaw means grilled meat in Tagalog.) The new location has 60 seats.

This summer I’ll be making a cocktail inspired by the green juice we serve at FAVA , the tiny little restaurant I own in Berkeley’s “gourmet ghetto.” At FAVA we focus on simplicity, using all organic ingredients and try to show off healthy, clean, and pure flavors with a rustic presentation. This is a spiked version of the green juice we serve, which was inspired by my travels and the flavors I experienced in the Yucatán in Mexico where we drank cold, hydrating, and intensely flavored aqua Frescas in the sun, and also from the fresh and deeply spiced flavors found in Middle Eastern markets.
FAVA’s Parsley, Lime, and Cucumber “Margarita” Recipe:
—1 1/2oz Fresh Lime
—1/2 oz Agave
—1/2 oz Mezcal
—1 1/2 oz Tequila
—2/3 Sprigs of Parsley
—4 Cucumber Chunks
—Chili and Sumac
Blend or muddle four chunks of cucumber with 2/3 sprigs of parsley (this drink should be bright green and in strained to preserve the nutritional value of its ingredients). Add agave, tequila, mezcal, lime, pinch of salt and blend. Pour over ice and serve in a chilled low-ball glass with spicy chili and sumac rim.
Culinary Diplomacy: Make Food, Not War
People always come together around food. As people move, they bring their foods with them. As cultures come into contact in the kitchen and dining room, a new sort of cultural diplomacy emerges that promotes the sharing of values, traditions, and worldviews through food. This new soft power can effectively bridge conflicts, at times more effectively than normal diplomacy. History has proven that national cuisines have spread organically around the world. Spreading culinary traditions, through state and non-state actors, as a way of sharing values, culture and tradition has been called cultural diplomacy, or gastrodiplomacy. Recently, this form of diplomacy has become popular, and has proven to be an effective way of bringing together people in conflict.
This discussion explored how governments, organizations and individuals are working to bring cultures together through food. As a new and understudied field, how can this tool of diplomacy be used more broadly in conflict resolution? How can gastrodiplomacy provide a greater impact on citizen-to-citizen interaction? As a growing field, who are emerging as leaders, and how can individuals play a role in diplomacy?

"THE COOKING KIDS PROJECT"
Prior to the panel discussion a group of students from Danila Kumer Elementary School from Ljubljana, Slovenia showcased their cooking skills in the NYU lobby.
The students were finalists of “The Cooking Kids” culinary competition for school-aged children which takes place every year in renowned restaurants in Slovenia. The program was developed by Ms. Anka Peljhan and introduces cooking skills to youngsters by emphasizing the use of healthy, local, and natural ingredients.
“The Cooking Kids” program fosters self-confidence in the kitchen, boosts the team work and nurtures mutual understanding. It also endeavors that grandmothers' recipes for traditional foods will further be preserved, moreover become part of family meals again. Next to cooking, children participating in the program also learn about home gardening and healthy life style. The Cooking Kids Program is supported by the Weston A. Price Foundation.

Ambassador Capricia Penavic Marshall
Lauren Bernstein is Director of the Diplomatic Culinary Partnership in the Office of the Chief of Protocol at the U.S. Department of State. The program is in partnership with the James Beard Foundation and strives to foster cross-cultural relationships through food. Working with talented chefs from across the country, Lauren programs members of the American Chef Corps in various kinds of public diplomacy efforts both at home and abroad. Lauren also develops all program events, from panel discussions to large-scale events. In her role as Protocol Officer, Lauren manages high level events for the Secretary of State, ranging from small dinners and breakfasts to receptions for several hundred guests. Before coming to the U.S. Department of State, Lauren previously worked as an attorney for the Public Defender Service for the District of Columbia. Over the last ten years, she has worked closely with D.C. youth and community based programs throughout the city. Lauren is from the Metropolitan area and lives in the District of Columbia.
From the seasonally inspired dishes he creates every day, to the numerous charities he has supported over the years, to his undeniable influence on the city’s palate, Chef Todd Gray’s impact on Washington, D.C.’s culinary scene is immeasurable. Many of the top toques in the nation’s capital have been shaped under his calm and patient tutelage.
His background in classical French and Italian techniques, proclivity for invention, and unflappable kitchen leadership has made Chef Gray a sought-after culinary mentor and an influential leader in the world of D.C. gastronomy. A longtime advocate for sustainable agriculture, he has worked tirelessly with local farmers to develop fresh, organic produce and other ingredients for his kitchen, including custom-grown beef.
Chef Gray has earned numerous awards for his kitchen artistry and inspired menu combinations. He has received five nominations for the James Beard Foundation’s Best Chef, Mid-Atlantic Award, and in 2011, after eight nominations, he was named the Restaurant Association of Metropolitan Washington’s 2011 RAMMY Chef of the Year.
Raised in Virginia, Chef Gray studied at the University of Richmond and graduated with honors from the Culinary Institute of America. After the CIA, he worked at a number of fine dining restaurants, where he was able hone his craft, refine his technique, and develop his kitchen philosophy prior to launching Equinox.
Zoe Kosmidou, Ph.D. was born and raised in Athens, Greece. She has studied architecture at the Paris (France) School of Fine Arts, International Relations at George Washington University, PR Management at American University and International Cultural Relations at Panteion University.
Dr. Kosmidou has developed a keen interest through academic research and professional practice in the promotion of the arts and culture as a means of peace building and conflict resolution. She has extensive experience in strategic partnerships with national, diplomatic and international organizations such as, foreign missions, the Smithsonian, the National Geographic, the National Gallery of Art, the Kennedy Center, the European Union Delegation, the European Council, the United Nations, UNESCO, the IMF and the World Bank. Strategic and public relations include collaboration with major think tanks, academic institutions, the U.S. Congress and Administration.
Dr. Kosmidou has designed and managed innovative projects for the promotion of Greek and European cultures. One of the most successful titled: “Health, Nutrition and Fitness” that includes a series of programs for the promotion of nutrition, healthy living and longevity was presented at the invitation of US Congress on Capitol Hill in 2013. She has organized, curated and managed art exhibitions in the USA and Europe and collaborated in joined European programs such as, the European Film Festival, EU Open House, European Kids Festival, European Night, Francophonie Festival, European Cultural Month.
Contributed to national programs that led to the empowerment of local communities through the arts, such as the World Cultural Economy Forum, an initiative for the rehabilitation of New Orleans post-hurricane Katrina and Creative Place Making in the City of Baltimore.
Participated and was keynote speaker in conferences related to conflict resolution, preservation of cultural heritage, development of cultural dialogue, restitution of illicitly exported cultural artifacts, cultural property and law.
Dr. Kosmidou contributed to the Greek–Turkish so called “earthquake diplomacy” that was initiated after successive earthquakes hit both countries in the summer of 1999. She designed and implemented programs of cultural exchanges between 80 sister-cities from both sides of the Aegean Sea that were aiming at the improvement of their bilateral relations.
Academically she has pioneered at the development of Cultural Diplomacy, a new field in International Relations that focuses on communication through the arts for conflict resolution. She was a Visiting Research Scholar at American University’s School of International Service and taught Cross-Cultural Communication as an Adjunct Professor.
Co-founded EUNIC DC, the DC cluster of the European National Institutes of Culture in Washington DC, in 2011. She directs the Hellenic Foundation for Culture in the USA and serves as President at the Pillars of Greek Culture, a non-profit organization focused on promoting Greek cultural, educational and art programs.
Author of the book: “The Power of Visual Logos” endorsed by the National Museum of Women in the Arts and contributing editor to arts, communication and international relations publications.
Pati Jinich was born and raised in Mexico and comes from a family of accomplished cooks and food maniacs. Absolute maniacs. Most of what she reads, thinks, researches, tests and teaches (including to her three boys) is about food.
Her interest in food built up as she tried to deny it. As a political analyst, she left things related to food for my spare time. As her and her husband started to grow a family, she began to think he was a macho man in disguise, who wanted a wife in the kitchen, since he insisted time and again that she quit her academic path to jump into cooking.
Pati did have wonderful incursions into the culinary field in the past. Right after she got married and moved to Texas, she taught Mexican cooking to friends and neighbors. Then, she became a production assistant for the PBS food series New Tastes from Texas hosted by Chef Stephan Pyles, along with guests Diana Kennedy and Patricia Quintana, pioneers who helped introduce Mexican ingredients into American cooking.
Once Pati and her family moved to DC, she retook her formal path as a political analyst and received a master’s degree in Latin American Studies from Georgetown University. She worked so hard, she got a merit scholarship and felt very proud. Soon after, she worked at the Inter American Dialogue, a policy research center, which she had considered her dream job, and kept on working even harder!
Yet, she got into an early existential crisis of sorts… Obsessively thinking about food rather than politics, after a year, she registered for a nightly program at L’Academie de Cuisine in Gaithersburg, Maryland. After a lot of hesitation, she decided to take a plunge, and left her job to give food a real try. She has never looked back. In 2007, prompted by the Director of the Mexican Cultural Institute in Washington, D.C., she launched Mexican Table.
Mexican Table is a culinary program which consists of a series of live cooking demonstrations, tasting dinners and workshops. Through this program she tries to swing a window wide open into the fascinating world of Mexican cuisine. She helps familiarize people with its ingredients and cooking techniques, with a sprinkling of culture, history and traditions.
Capricia Penavic Marshall serves as Ambassador-in-Residence at the Adrienne Arsht Latin America Center at the Atlantic Council in Washington, DC. She is President of Global Engagement Strategies, which advises international public and private clients on issues relating to the nexus of business and cultural diplomacy. She travels across the country speaking to organizations and corporations about her experiences, lessons she has learned throughout her career in public service, and how best to integrate cultural diplomacy into business.
From 2009 to 2013, she was Chief of Protocol of the United States, bearing the rank of Ambassador and setting the stage for diplomacy at the highest levels. In this capacity, she worked to leverage U.S. relationships with foreign governments developing strategies to transform global engagement. Ms. Marshall oversaw six State and Official Visits, countless Working Visits, the G20, Nuclear Security, APEC, G8, NATO and Sunnylands Summits, and the protocol arrangements during travel with the President and Secretaries of State to forty-two countries. Moving beyond traditional methods of engagement, Ms. Marshall fostered international goodwill through a new division in the protocol office, Diplomatic Partnerships. With creative programming under this division she created sustained, mutually beneficial partnerships between the foreign Diplomatic Corps and business, government and community leaders across America. From 1997 to 2001, Ms. Marshall served as Deputy Assistant to the President and White House Social Secretary. From 1993 to 1997, she was Special Assistant to the First Lady of the United States, Hillary Rodham Clinton. In addition to her Bachelor’s Degree in Political Science from Purdue University, Ms. Marshall holds a Juris Doctor from Case Western Reserve University School of Law.
Ms. Marshall is a first-generation American of Croatian and Mexican descent. In March 2014, ELLE magazine named Marshall to its annual “Washington Power List,” as one of DC’s most influential women.
Johanna Mendelson Forman is a senior advisor with the Managing Across Boundaries Initiative at the Stimson Center, where she works on security and development issues, including regional multilateral engagement, civil-military relations and stabilization and reconstruction. She is also a scholar-in-residence at the School of International Service at the American University. An expert on the Caribbean, and Brazil, she also has worked extensively on foreign assistance and humanitarian programs in Haiti. A former co-director of the Post-Conflict Reconstruction Project at the Center for Strategic and International Studies, Mendelson Forman has written extensively on security-sector reform in conflict states, economic development in postwar societies, gender and conflict, and the role of the United Nations in peace operations.
